The coffee, the craft, how to use it.

The Coffee

Wine-style fermentation, juice-box results.

A community-grown coffee from Coorg, produced by the Sirangalli community and sourced through SICC. Processed as a carbonic maceration natural.

Whole cherries ferment under carbon dioxide in the carbonic maceration style, which builds fruit character and sweetness while keeping the cup structured and clean.

How to get
the most
out of it.

Espresso · Recommended Starting Point
18g
Dose
54g
Yield
1:3
Ratio
30-34 sec
Time
93°C
Temp

Consider a ristretto (1:1 ratio between the dose and the yield) if you like it fruitier and brighter.

Milk Based Drinks

The orange zest and blackberry cut through small milk drinks beautifully — best in cortados and small fruity flat whites.

Cortado
Double espresso · steamed milk at 1:1 or 1:2
Black Drinks

Built for filter and juicy espresso — the orange zest brightness and prune sweetness open up fully without milk.
