The Kolli Hills are one of Tamil Nadu's best-kept coffee secrets. Tucked into a plateau at 1,200–1,400 MASL, the estates here grow Chandragiri — a varietal known for its clean sweetness and gentle acidity — and process it as a natural, letting the fruit do the talking.
We roast this light to preserve every layer the cherries built in. The result is a cup that's fruity and sweet up front, with a berry note that lingers long after the last sip. Best suited to manual brewing where nuance has room to breathe.
Coarser grind than usual for a light. Low temperature — 90°C. Go longer on the ratio to let the fruit express itself.
Natural-process light roasts are sensitive to over-extraction. Keep water temperature at 90°C and avoid very fine grinds. The fruity notes are most vivid in the first half of the extraction.
Berry and chocolate notes come through even in milk — best in a small flat white or cortado where the coffee isn't diluted.
