The coffee, the craft, how to use it.

The Coffee

From the hills that gave coffee its character.

The Kolli Hills are one of Tamil Nadu's best-kept coffee secrets. Tucked into a plateau at 1,200–1,400 MASL, the estates here grow Chandragiri — a varietal known for its clean sweetness and gentle acidity — and process it as a natural, letting the fruit do the talking.

We roast this light to preserve every layer the cherries built in. The result is a cup that's fruity and sweet up front, with a berry note that lingers long after the last sip. Best suited to manual brewing where nuance has room to breathe.

Brew Guide

How to get
the most
out of it.

Espresso · Recommended Starting Point
20g
Dose
50g
Yield
1:2.5
Ratio
30–35s
Time
90°C
Temp

Coarser grind than usual for a light. Low temperature — 90°C. Go longer on the ratio to let the fruit express itself.

Natural-process light roasts are sensitive to over-extraction. Keep water temperature at 90°C and avoid very fine grinds. The fruity notes are most vivid in the first half of the extraction.

Milk Based Drinks

Berry and chocolate notes come through even in milk — best in a small flat white or cortado where the coffee isn't diluted.

Latte
Double espresso · 180ml milk · light foam
Black Drinks

Vivid raspberry and berries up front, dark chocolate mid-palate, clean and bright finish. A showcase cup.

Pour Over
15g · 225ml at 90°C · 1:15 · 4 pours · 3:30 total
AeroPress
15g · 200ml at 88°C · 2 min steep · press slow
Resting: Rest 5–7 days after roast. Peak flavour Day 7–21. Avoid brewing fresh off the roaster.
